Imported Cheese - Hard

Hard cheese, also known as granular or stirred-curd cheese, such as Cheddar, Parmigiano-Reggiano, and Gruyere, are just as the name suggests - Hard. From cave-aged funky cheddar to the perfectly melt-able Raclette, these cheeses are typically made using methods that draw much of the moisture from the curd during the making process, are pressed harder and longer than other cheeses, sometimes several times, and are usually allowed to age for longer periods up to 1 or 2 years, with some hard cheeses being aged for up to 12 years!
