Sorcier de Missisquoi

Made by Fritz Kaiser Fromagerie in Noyan (Quebec, Canada)

Inspired by the traditional Morbier. Made from pasteurized cow's milk, it is a soft and elastic cheese that proudly displays a line of vegetable ash at its heart. It has a delicate taste. The smell of the crust is similar to that of wet hay, but that of the pate is close to hazelnut.
