Using only local milk from the Dairy Farmers of Newfoundland and Labrador, our cheeses are made several times each week.
Starting with raw milk in the early morning, carefully pasteurized and cultured, each run begins its' own unique characteristics, meticulously nurtured from milk to press into one of our many fun, yet decadent cheeses in a way that only a masterful, experienced eye, can foster.
Our fresh cheeses, including White Fleet and Farm Fresh are made and refined in just under 48 hours, while our cheddar-style cheeses such as Avalon Cheddar and Logy Bay Jack are cared for over a span of 2 to 12 months, carefully turning, cleaning, and guiding each wheel to maturity.
